Deliciously Creamy Butter Chicken Recipe: A Step-by-Step Guide

Introduction:
Butter Chicken is a quintessential dish in Indian cuisine that delights the palate with its rich, creamy texture and complex blend of spices. At its core, Butter Chicken consists of tender pieces of chicken that are marinated, cooked in a tomato-based sauce, and finished with butter and cream.

Ingredients:

  • 500g boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons butter
  • 2 tablespoons oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 cup tomato puree
  • 1/2 cup cream
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon coriander powder
  • 1 teaspoon Kashmiri red chilli powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Cashew Paste
  • 1 tablespoon kasuri methi (dried fenugreek leaves)
  • Fresh coriander leaves for garnish (optional)

Instructions:

  1. Marinate the Chicken:
    • In a bowl, mix together 1/2 cup yogurt, 1 tablespoon ginger garlic paste, 1 teaspoon garam masala, 1/2 teaspoon Kashmiri red chilli powder, and salt to taste.
    • Add the chicken pieces and coat them well with the marinade. Let it marinate for at least 30 -45 minutes.
  2. Cook the Chicken:
    • Heat 1 tablespoon of oil in a pan over medium heat.
    • Add the marinated chicken pieces and cook until they are browned on all sides and cooked through. Remove the chicken from the pan and set it aside.
  3. Prepare the Sauce:
    • In the same pan, add the remaining oil and butter.
    • Add the chopped onion and sauté until golden brown.
    • Add the minced garlic and grated ginger, and cook for another 2-3 minute.
    • Stir in the tomato puree and cook until the raw flavor disappears.
    • Add the remaining garam masala, ground cumin, ground coriander, Kashmiri red chilli powder, turmeric powder, cashew paste, and salt. Mix well.
  4. Simmer:
    • Pour in the cream and stir until well combined.
    • Add the cooked chicken back into the pan and simmer for 10-15 minutes, allowing the flavors to meld together.
    • Crush the kasuri methi between your palms and sprinkle it over the dish. Stir to incorporate.
  5. Garnish and Serve:
    • Garnish with fresh coriander leaves if desired.
    • Serve hot with naan, rice, or your favorite bread.
