Ingredients:
- 200g paneer (Indian cottage cheese), cubed
- 2 tablespoons butter
- 1 tablespoon oil
- 1 large onion, finely chopped
- 3 tomatoes, pureed
- 1 tablespoon ginger-garlic paste
- 1 green chili, slit lengthwise (optional)
- 1 teaspoon Kashmiri red chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1/2 teaspoon dried fenugreek leaves (kasuri methi), crushed
- Salt to taste
- 1/4 cup heavy cream
- Fresh coriander leaves for garnish
Instructions:
- Preparation of Paneer:
- Heat 1 tablespoon of butter in a pan over medium heat.
- Add the paneer cubes and lightly fry them until they turn golden brown. Remove from the pan and set aside.
- Preparing the Masala:
- In the same pan, add the remaining butter and oil.
- Add the chopped onions and sauté until they turn translucent.
- Add the ginger-garlic paste and green chili (if using), and sauté for another minute.
- Add the tomato puree and cook until the raw smell disappears and the oil starts to separate from the masala.
